Instructions
  1. Drain bird’s nest pieces. Remove vein from shrimps. Remove dirt with salt and caltrop starch. Then rinse under tap water for 20 minutes until the shrimps become hard. Drain. Wrap the shrimps with a clean towel. Refrigerate for at least 2 hours (the shrimps will become dry).
  2. Put the shrimps in a large bowl. Add salt of the seasoning ingredients. Stir in one direction until the shrimps become sticky. Then add bird’s nest pieces and the remaining seasoning ingredients.
  3. Sieve Tang flour and salt together. Bring 1 1/2 cup water to the boil. Pour in Tang flour. Stir with a stick quickly. Cover for 5 minutes.
  4. Kned Tang flour into a soft dough. Stamp out round siomay. Put in suitable amount to filling. Put the siomay into a greased steaming basket. Steam for 4 to 5 minutes. Serve.
