- 19 g soaked bird’s nest
- 178 g flour
- 6 eggs medium
- 225 g fine granulated sugar
- 10 inches basket
- 1 mulberry paper

Instructions
- Absorb water from bird’s nest with a clean cloth.
- Sieve the flour 3 times. Set aside.
- Place mulberry paper at the bottom basket. Set the basket over a wok and put in refrigerator.
- Whisk egg with egg mixer. Add small amount granulated sugar into the egg mixture each time. Whisk until the mixture become creamy. Add flour into mixture for several times. Then stir the mixture lightly. Pour the mixture into the centre an put into refrigerator for 3 hours. Put bird’s nest on side pudding. Serve.
